I love to make 12 to 16 of these "egg quiche" ..... I pre make them and eat them as a "broke-fast" or just snacks, even for dinner.... they taste amazing!
What do you need for 10 quiche?
A muffin tin (mine is 10)
5 eggs
1 cup of chopped cooked broccoli
1/4 cup of chopped onions
1/4 cup of red peppers
1 cup of mozzarella
1 cup of feta cheese
Salt
Pepper
Make sure the veggies are cooked, mix all the ingredients together and add them to 3/4 high in each space of the tin tray.
Cook them for 10 minutes at 350 degrees... make sure they don't over cook.
Eggs cook fast!!!
